A little bit about our Miso maker. You drive about 4 hours from Tokyo, his miso factory located near the beautiful landscape of Japanese Alps. The land (especially their water) is truly nurtured by the climate of the Alps. Having this enriched environment, his company has been passed down for generations since 1909 (110+ years) always thriving to innovate the miso making process.
